I visited Auberge du Pommier as a part of the Visa Infinite Dining Series. For those who are not aware, the Visa Infinite Dining Series ties up with restaurants every season and offers Visa Infinite cardholders to purchase tickets to be a part of these experiences. It usually costs a few hundred dollars but the experiences are unique. Each course is usually paired with Wine or Cocktails as appropriate.
If you purchase multiple tickets, you generally get your own table but if you are going solo like me, you end up seating at a table with other individuals who are there on their own.
Auberge du Pommier is a fine dining restaurant that serves French cuisine and has been around for a while. The restaurant serves food in two rustic woodcutter cottages that were built in the 1860s and has a warm, cozy yet elegant interior.
Due to work commitments, I was a bit late and ended up missing half of the Canapes, so I will skip those and get directly to the other courses.

First on were the Scallops with Wild Acadian Caviar, Raphaelle Potatoes, Beurre Blanc. being a seafood lover, I am usually pretty critical about it. The plating of the Scallop was beautiful with a foam surrounding it; it gave me a feeling of the sea.
The balance of flavours on this was perfect right from the creaminess of the Beurre Blanc to the mildness of the Caviar and the Scallop being perfectly cooked. This was one of my favourite dishes of the night.

Next on was the Spring Chicken, Morels, Wild Leeks and Truffle. The flavour of truffle was intense and the Spring Chicken was tender. I missed out to click a decent photo of this.
After some Chicken, we were back to seafood with Butter-Poached Turbot, English Peas, Asparagus, Savagnin Sauce. This was probably the first time I tried Turbot, which is a flat fish and has a delicate flavour to it. Keeping it simple by poaching it with Butter was a great idea and the Peas and Asparagus elevated the dish.

Venison with Maitake, Parnsip Puree, Wild Sarsapilla Sauce was the next course. Even though this Venison was well cooked, I did feel that there was some lack of cohesion of the ingrediends on the plate. Everything individually made sense but together, it lacked that punch which would make it an A grade dish. It was still pretty good.

The night ended with Pavlova, Strawberries, Chartreuse and it was the perfect dessert one would ask for. No overpowering sweetness, no over the top fanciness, a rich Pavlova and some delicious Strawberries.

Overall the experience was top-notch. The food, the ambiance, the service and the pairing was all on point. Some dishes were good enough, while some others stole my heart away. I will surely be visiting Auberge du Pommier again.
